My first thought on reading this was, "what's the big deal, Charlie Papazian published a coffee stout recipe over twenty years ago". I was glad to see that this really was something new. While fermenting coffee beans is an existing practice, that's done inside the fruit in order to enhance the flavor (I'd mention Kopi Luwak too, but that digestion, not fermentation). Actually fermenting liquid coffee like that is a really interesting idea. I do wonder what sort of yeast is used though - the patent page doesn't seem to mention it.

Probably because they want the patent to cover all types of yeast that could potentially be used in its production. That's the thing about patents: the more vague they are, the more they cover.
